Artichoke, Goat Cheese, Tomato Naan Pizza
When my sweet husband is at the university, in class or working on his final year project during the dinner hours, I know I'll be eating solo. So, I prepare something simple, quick, and enough just for me! Plus, he likes his meaty pizzas, and would not go this one. LOL.
This pizza recipe is simple, delish, and meat FREE!! Here is my twist on the veggie pizza.
Ingredients
garlic naan bread
goat cheese crumbles
marinara sauce
sliced vine-ripened tomatoes
quartered marinated artichokes
pitted greek kalamata olives
**Preheat your oven to 350 degrees F
Gather your ingredients.

Side note: I am obsessed with goat cheese and I try to ration my use of it on my pizza.

First, place foil in a baking pan/sheet and place your naan bread on the pan. Then, top your garlic naan bread with 2 table spoons of marinara sauce.
Starting with the tomatoes, assemble all other flavorful toppings--to create a flavorful pizza.
Place pizza on top rack in the oven. Bake pizza for approximately 15 minutes or until the edge of the naan bread is golden brown and the cheese is melted. Let cool.

Because of the size of the naan bread, it will make enough for two, or even leftovers for lunch the next day. :-)
